Super Easy (microwave) Mushrooms
'King-Oh' Oyster MushroomsArrange mushrooms in covered microwavable bowl. Cook on high for 2 to 3 minutes. Add salt to taste and toss lightly. Serve.

Recipe Tips:
- Serve over steaks, as a side dish or appetizer.
- Medium and large mushrooms may be shredded, sliced or chopped
- Cooking times will vary depending on microwave, quantity and preparation size being cooked (do not overcook). Mushrooms should be moist and plump.
- Variations: Add butter or your favorite sauce (such as soy sauce or oyster sauce).
Easy Cream of Mushroom Soup
1/2 cube of Butter (1/4 cup)PREPARATION: Dice mushrooms by breaking in half lengthwise and then shred (like string cheese) lengthwise into 1/4 to 1/2 " thick sections. Arrange in bundles and dice. Trim leek by removing all dark green leaves then trim off stem just above roots. Cut leek lengthwise in half or quarters then dice in about 1/2" slices. Soak and rinse in a bowl of water to remove dirt and grit then drain in colander. In a small cup, add enough cold water to the cornstarch to make a runny paste then set aside.
1 lg. or 2 med. sized Leeks
4 lg. 'King-Oh' Oyster Mushrooms (or 5-8 smaller mushrooms)
1 1/2 tsp. Salt
1/4 tsp. Pepper
32 oz. (1 qt.) Chicken Broth
1 quart Half & Half
1/3 c. Cornstarch
Chopped Parsley for garnish (optional)
COOK: In a medium size stockpot, melt butter and saute leeks until wilted (about 5 minutes). Add diced mushrooms and stir until all butter is absorbed. Continue sauteing several minutes until mushrooms are cooked and moisture returns to the bottom of the pot. Sprinkle salt and pepper over mixture and stir. Add chicken broth and bring to boil over high heat. Add Half & Half and continue cooking stirring regularly. Just as the soup returns to a boil, add cornstarch and stir until thickened.Enjoy!
Recipe Tips:
- Soup will be on the thin side. If you prefer thicker soup, use up to 1/2 cup of cornstarch.
- This soup reheats well. Can be made in advance then just heat and serve.
- This soup is especially good with sliced and toasted Sourdough or French bread.
Mushroom Pilaf
1/2 cup (1 stick) ButterIn a large lidded skillet, melt butter and brown vermicelli in open skillet on high heat until light brown. Add mushrooms and continue stirring until mushrooms are sauted and vermicelli is golden brown. Stir in rice, then chicken broth, salt, pepper and parsley. Bring to a boil then cover with lid and turn down heat to lowest setting. Simmer 20 minutes (Do NOT lift lid during cooking no matter how tempted you are!). Fluff with fork just before serving.
1 cup Angel Hair Vermicelli (crushed)
2 cups diced Mushrooms
2 cups white Rice
32 Oz. (1 qt) Chicken Broth
1 tsp. Salt
1/4 tsp. Pepper
2 Tbsp. chopped Parsley (optional)

Recipe Tips:
- Use long grain rice for dryer rice or medium grain rice for moister rice (or mix them 1/2 & 1/2 if you have both).
- Half a cube of butter can be substituted for a full cube with good results.
- Great inexpensive dish for potlucks. Keeps warm for hours in a small (6-pack style) ice chest.
- Variations: Use cut 'Fideo' (thin vermicelli) which can usually be found in the Mexican food section of the grocery store in 7 oz. bags for about 25 cents. They are extra thin and already crushed & ready to go. Or for chewier pilaf, use linguini for the pasta (break into 1" pieces).
To Freeze 'King-Oh' Oyster Mushrooms for Future Use
'King-Oh' Oyster MushroomsTO FREEZE: Place whole, sliced or diced raw mushrooms in plastic bag. seal and freeze.
Zip-Lock or sealable Freezer Bag
TO USE: Thaw mushrooms then cook as usual.

Recipe Tips:
- If you have a vaccuum style sealing machine for boilable bags, try placing enough young mushrooms (or peeled strips of larger mushrooms) for a meal along with a pat of butter in a microwavable bag. Then seal & freeze. To serve, microwave approximately 2 minutes (times will vary) for an instant side dish with steaks! Oooooh sooooo good... & oh so EASY!
